Cruise ships have started returning to visit St. Croix

March 3th - Candlelight Concert 7:30 pm at Whim

March 12th - Art Thursday - 5 - 8 p.m. Shops open.

March 14th - St. Patrick's Day Parade 11:00 a.m.

The 15th Annual Flower and Fine Arts Festival will be held Saturday evening, March 28, from 7-9pm and Sunday, March 29, from 10-4pm at the St. George Village Botanical Garden.

March 31st - Transfer Day - Celebrate the Danish turning over the Island to the United States.

Every Tuesday evening at the Harbor Master Beach Club (Hotel on the Cay) a West Indian Style Beach BBQ with chicken, ribs, and fish, complete with all kinds of great side dishes.It is an all you can eat buffet, Entertainment includes Limbo dancing, a broken bottle dancer, a fire breather/eater, Mocko Jumbie Dancers, and a live steel pan band. This is a great event for people of all ages! Take your picture with a Mocko.

CARRIBEAN CHICKEN    (more...)

2 boneless/skinless chicken breasts
1 ½ cups pineapple juice
½ cup rum
1 small lemon
1 small lime
1 orange
1/2 cup coconut flake
1 box of wild rice
lemon, orange or lime wedges for garnish

In a med-large frying pan place the pineapple juice and rum. Bring to a small boil place chicken breast in juice. Allow to cook until chicken is fork tender. Don't let juice evaporate.

If you see this happening, add more juice to pan. Dice up fruit into bite-sized pieces and let cook with chicken and juice. Sprinkle approx. 1/4 of the coconut flakes in - this will thicken your "sauce". Season with salt and pepper. Serve over rice

HOT BUTTERED RUM   (more...)
(Crock pot brewed and makes the most delightful aroma.)

2 Cups firmly packed brown sugar
½ cup butter
dash of salt
3 sticks of cinnamon
6 whole cloves
½ teaspoon nutmeg
8 Cups hot water

topping:
Heavy cream – whipped
Nutmeg

Put sugar, butter, salt, cinnamon and cloves into crock pot. Add hot water. Cook with cover on low for 4 hours. Blend in the rum. Ladle into warm mugs. Add a dollop of whipped cream and sprinkle with a dash of nutmeg. Makes 8 cups of liquid.

Frangipani

You may have already seen this picture but here is the little "cutie" that likes to eat the Frangipani leaves. I like the flower.  The flower can be white or pink.  It blooms in the summer and that little guy has to get way up in the tree for his meals. He is about 6 inches long and about the size of a quarter in diameter. Looks like he is wearing little boots.
