FEATURED RECIPE
FEATURED RUM DRINK

MANGO BUTTER     (Similar to apple butter)

6 c. half-ripe or ripe mangoes, cut fine
2 tbsp. lime or lemon juice, if desired
2 1/2 to 3 c. sugar
2 c. water

Cook mango slices with water until tender. Put through sieve or fruit press, if mangoes are stringy. Add sugar and cook until consistency of a butter. Pour into hot, sterile jars, seal and process pints at boiling for 10 minutes. If you like, you may add spices with the sugar, 1/4 teaspoon each ground cloves and allspice and 1/2 teaspoon each ground cinnamon and nutmeg.

BAHAMA MAMA
LOVE THE MAMA

1/4 oz Coffee liqueur
1/2 oz Cruzan Dark rum
1/2 oz Coconut liqueur
1/4 oz 151 proof rum
Juice of 1/2 Lemon
4 oz Pineapple juice

Combine all ingredients and pour over cracked ice in a Collins glass. Decorate with a strawberry or cherry and serve.

FLORA & FAUNA
mongoose

Mongooses were imported from India in 1882 to combat rats in the sugar cane fields. Since the mongoose is active by day and the rat by night, the project was DUH? unsuccessful. The mongoose is still seen darting across St. Croix roads.

They are an agile ferret-sized mammal and feed chiefly on small animals and fruits.

Sugar Mills

Dotting St. Croix are the ruins of many historic Sugar Mills dating from the 1700’s.  The slave trade flourished with the increase of rum production, as the Danish landlords prospered.

 

 

Visit Whim Plantation to see and learn what life was like for a plantation owner and his slaves.  Learn the 3 methods of rum production. See the equipment used and sugar cane actually growing in the field.

Soup, salad, appetizers, sandwiches and a full line of main dishes - steaks - cajun favorites and pasta fill their menu.
